I run the kitchen for a drug treatment program and I want to find a non alcoholic version of a bur blanc sauce that I can make for the guys.

Any sauce that calls for alcohol essentially becomes non alcoholic after the cooking process because the alcohol gets cooked out so you could just make it the way it is supposed to be and you should be fine. Good luck!
